Snacks come in a lot of varieties such as confectionery (i.e. candies, jellies) and salted snacks (i.e. crisps, pretzels).
A continuous production line for snacks starts at the continuous dosing of the powder and liquid ingredients. The liquids are being sprayed onto the solid ingredients that gravimetrically pass through the homogenizer phase. After that, the blend of ingredients form a slurry and enter the actual continuous mixer. In the continuous mixer, controlled mechanical energy is applied to the blend of ingredients in order to correctly develop the product. At the end of the mixer, the dough comes out in a continuous stream and can be directly fed to the dough make-up line or in case resting is required, to the Sobatech continuous bulk fermenter.
