We are excited to share that Sobatech has been nominated for the KVK Innovation Top 100 with our latest breakthrough: HOT&COOL technology. This innovation is set to redefine how dough temperature is controlled in modern food production. Drawing on decades of experience in industrial dough processing, we have developed a fully automated solution that heats and cools dough inline all within a single, seamless process.
At the heart of the technology are solid-milled kneading tools with hollow cores. These allow for the flow of water or other (cooling) agents, enabling precise, real-time temperature adjustments directly in the production line. The result? Greater consistency, improved product quality, and a much more efficient process.
Temperature control is critical in baking and food manufacturing, especially for processes like chocolate conching or cold dough production. Traditionally, achieving rapid temperature shifts involved extra steps like flour coolers or CO2 injections. Not anymore. With HOT&COOL, manufacturers can hit extreme dough temperatures in just minutes, without disrupting the continuous process.
By removing the need for separate heating or cooling of ingredients, our system helps reduce energy use and simplifies operations.
